Day 3 of having a blog and I am adding my first recipe. We were in
Biloxi, Ms in September, this was one of our stops along the Gulf Coast. If ever there, you need to have dinner at the
Half Shell Oyster House. Our dinner was amazing and the wait staff was outstanding. Yes, this was a recommendation from
Trip Advisor, I believe it was ranked #2 of the restaurants in the area. As I said in my first post, my boyfriend is always waiting for me to recreate foods from our travels. For his dinner that evening, he ordered Sirloin with boiled fried potatoes. He was in love at first bite! How hard can it be to recreate a boiled fried potato?
First attempt didn't cut it, I purchased Simply Potatoes at the grocery store, already boiled potatoes. Not what I was looking for. The potatoes were good, but not the finished product I was looking for. I searched the internet trying to find just the right one. I learned this is a southern dish, it's fried food, what's not to love? I wanted to add it to my Pinterest account, but it didn't have a link to add web site.
I hope if you try the recipe, you will love it as much as we did and do. I have also added a picture of the dinner I had. Red Snapper with Fried Spaghetti, yes, that is correct Fried Spaghetti. Totally Awesome. Topped with a salsa and a lemon sauce and parmesan cheese.
Recipe for Rosemary-Infused Boiled-Fried Potatoes:

Serves 2
- 3 small to medium potatoes, sliced into thick chunks
- ~4 tbsp (50 g) butter, cut into chunks
- 1 large sprig rosemary (I used dried rosemary, probably 1-2 tbsp.)
- 5+ cloves of garlic, halved
- 1/4 cup onion, diced
- salt
Place potatoes in a single layer (or as close as you can get) in a large, deep skillet, sprinkle over with onion and garlic. Add water until the potatoes are barely covered, then add butter, rosemary, and salt. Bring it to a boil and cook for 15 - 20 minutes, letting the water evaporate. Once it has, reduce the heat to medium and fry the potatoes until they're crispy, golden-brown and delicious. (my pictures. I am making the potatoes again tonight and I will add step by step pictures.) The whole clove of garlic cut in half really is a necessity. Do not cut corners and use chopped or minced garlic in the jar.

| Here I added the Rosemary, butter, and salt. The process is amazing. As the water is boiling and begins to evaporate, you can tell by the change of the cooking sounds the water is gone and the frying process has started. |

| Fry till potatoes are golden and crispy. We like for everything to be really crispy. The Rosemary is cooked all thru the potatoes. If you try, please leave me a comment to let me know if you liked the potatoes. |

| I served the potatoes with garlic shrimp and a jumbo lump crab cake. Crab cake is broiled instead of fried. Costco has jumbo lump crab meat from North Carolina for $23.99. Also serve with a small side salad. Crab cakes $6.00 per person. Cheaper then eating out. Majority of restaurants are charging between $13-$20 for a crab cake. |
